This is one of my husband's favorites. It's really delicious and challenging as well. Here is the ingredients :
Filling:
1lb of ground beef
1/2 large onions chopped finely
1/4 red bell pepper
1 teaspoon of garlic paste
2 teaspoon of tomato paste
1 medium size tomato seedless and chopped finely
1 teaspoon Aji Marillo (optional if you don't like spicy)
a pinch of papprika
1 cube of beef bouillon
a dash of Ajinomoto (optional)
a bunch of cilantro
salt+pepper+cumin to taste
2 boiled eggs
a bunch of gold raisin
black olive
Skin
10 medium size of boiled russet potatoes
all purpose flour as needed
eggs as needed
Boil the potatoes and 2 eggs (take out the eggs after 15mins) let the potatoes boil until they are soft
While the potatoes are boiling, on a pan fry onions, red bell pepper and garlic until they are brown. Then add tomato, beef cube, aji marillo and tomato paste cook for about 3-5mins. Add ground beef and keep stirring until it's cook. Add paprika, ajinomoto and cilantro before you place it on a strainer. Put the meat on a strainer to get rid of the excess fat. *It needs to be dry*
Mash the potatoes (must be really smooth)
Add 1 tablespoon powder milk (optional)
Add Salt+white pepper
1 egg
Mix everything together
1 whisk egg
a bowl of all purpose flour
sprinkle a plate with flours
Take some flour from the bowl and cover it on your palms
take a small handful of potato and flatten it
start filling it with meat + raisin+olive+egg and close it. shape it like an oval and cover it with flour. (use a lot of flour so it'll be easier to shape it. Put it on a plate and keep doing the same thing until your potatoes are gone.
Heat up your frying pan
put enough oil to fry the potatoes
Take the potato and cover it with eggs that you have whisked and fry them until they are golden brown.
Serve this with rice and Salsa Criolla
